Welcome to a flavorful, fun and informative course that explores the ever-evolving world of food and nutrition in 2025! From mood-boosting mushrooms to personalized nutrition plans, this course will give you a front-row seat to the culinary revolution that’s changing the way we eat and think about eating. Whether you’re a wellness warrior, a curious foodie, or someone just trying to figure out what to snack on next, this course is packed with bite-sized insights (e.g. What Shapes Our Culinary World? Food for Thought (Literally!) Snacking Gets Smart, Kitchen vs. Pharmacy and more). This course is sponsored by the Rio Grande Cancer Foundation. Jacqueline Cordova is a certified health nutrition coach from the Institute of Integrative Nutrition in New York, and the Living Foods Institute in Georgia. She has three years' experience coaching clients individually, as well as seven years' experience teaching workshops and classes. Cordova majored in Computer Information Systems from the Universidad Autonóma de Guadalajara, Jalisco in 1994, and owns Green Ingredient Express, a health-conscious restaurant located in west El Paso. She has been a guest speaker for various local events including the Wise Latinas Summit, El Paso Museum of History: Healthy Thanksgiving Workshop, Rio Grande Cancer Foundation: Keep on Dancing, Femfessionals El Paso, El Paso Community Foundation: Cultivate Forum, and the Autism Society of El Paso.
